Ingredients
- 50ml Solento Reposado Organic Tequila
- 5ml Agave
- 150ml Sanpellegrino Pompelmo
- 5ml Grapefruit shrub [zest of 2 grapefruits, 2 cups of peeled grapefruit segments, 2 cups of sugar, 2 cups of apple cider vinegar]
- 4 Molle peppers
- 25ml Lemon juice
Method: In a jar combine, sugar and zest from grapefruit, mash together, add grapefruit segments, mix and leave in fridge for over 24hours.
Thereafter add vinegar and mash all ingredients well to combine. Store in fridge for another 24 hours, stirring 2-3 times during the wait.
Afterwards pour all ingredients through a fine mesh sieve into a jar. Enough to use for all your future cocktail prep. Keep stored in fridge
Garnish with a dehydrated grapefruit and mole peppers
