Ingredients (serves 4)
- 1 tbsp Colavita olive oil
- 300 g mushrooms, finely sliced (button, cremini, or a mix with porcini/shiitake)
- 1 cup cream (heavy or double cream)
- 1–2 tsp Sabitino White truffle sauce
- Your choice of Colavita pasta
- Salt, to taste
- Finish with grated parmesan
Method

Cook the mushrooms
Add mushrooms and cook until they release their moisture and begin to caramelise. Don’t rush this—this is where the flavour builds (about 6–8 minutes). -
Add cream
Lower the heat and stir in the cream. Let it gently simmer for 3–5 minutes until slightly thickened. -
Truffle moment
Remove from the heat and stir in the truffle paste. Taste before adding more—truffle should whisper, not shout. -
Season & finish
Serve over Colavita pasta, season with salt. Finish with parmesan and done!
