For The Chicken
Place 2 handfuls of bruschetti classic mini bread toast in a blender and blend well.
Once blended, place into a large bowl and mix with a handful of grated parmesan cheese, 1 tsp of oregano, salt and pepper.
In a separate bowl, whisk the egg with 15ml milk.
Slice the chicken breast in half through the thickness, so that it looks like you have 2 thin chicken breasts.
Dip the chicken breasts into the egg mixture then coat with the bruschetti crumbs.
Air fry for 10 minutes on 180°. Alternatively heat 1-2cm of oil in a large pan on medium high heat. Place the chicken into the heated oil and fry for 2-3 minutes on each side until golden brown. Remove the chicken and allow it to drain on a paper towel lined plate.
For The Salad
Place the rocket leaves in a large bowl.
Arrange and top with cherry tomatoes, avocado, buffalo mozzarella, and chicken schnitzel.
Dress with basil pesto, black olive spread, olive oil, salt and pepper.
Pair with a glass of Pinot Grigio Romeo & Juliet and Enjoy!
