Method

Bring your stove to a medium heat. Pour 2 tbsp of olive oil and 2 crushed garlic cloves into a medium sized saucepan. Add 300G passata, 200G cherry tomatoes, a dash of tomato concentrate and 30ML of water. Defrost buffalo mozzarella and cut into 2 halves. Add in 1 of the halves of mozzarella broken into pieces and 4 torn basil leaves. Cover and allow the sauce to cook for 30 minutes while stirring at regular intervals. Taste, season and keep warm.

Bring a large pot of salted water to a boil. Add 250G gnocchi and cook until they float to the surface - this should take approximately 1 to 2 minutes.

Preheat the oven to 200°C.

Take the gnocchi out with a slotted spoon and place in the tomato sauce mixture.

Stir and transfer to an oven-proof dish. Add the remaining mozzarella and basil leaves both torn into pieces and top with grated parmesan cheese. Bake for 10 minutes, until the mozzarella has melted. Remove the foil and bake for another 2–3 minutes, until the cheese is golden.

Serve immediately and enjoy with a glass of Zenato Veneto Rosso.
