These artichokes are as close to the fresh authentic Mediteranean ones you get in an Italian restuarant...in Italia! Closest I have got to replicating that taste before now was when I bottled fresh artichokes in Olive oil and herbs and vinegar myself last year. These are so worth it. Don't compromise, the Olive oil makes a huge difference.
