MY MOM’S PASTA
(serves 5)
Ingredients
- 500 g Colavita rigatoni
- Colavita Extra virgin olive oil
- Salt
- 1 onion, finely diced
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 2 anchovy fillets (optional)
- 3 cloves of garlic, chopped
- Small handful of Basil
- 2 Tablespoons of Polli roasted peppers in oil, chopped
- 2 tins of Ciao whole peeled tomato or 1 bottle of Ciao passata
- 1 tsp sugar (optional)
- 1 tsp Colavita red wine vinegar
- 4 courgettes, diced
Finish
- Fresh basil leaves
- Colavita Extra virgin olive oil
- Parmigiano Parmesan
- Cracked black pepper
Method
- Cook onion, carrot and celery slowly in olive oil with salt until soft and sweet.
- Add anchovies and let dissolve, then garlic and chili for a minute. Add basil.
- Add passata or whole peeled tomatoes. Plus vinegar and sugar. Simmer 15–20 minutes until light and fresh.
- Pan-fry courgette separately in olive oil until golden; season.
- Fold courgette into sauce.
- Cook rigatoni al dente, toss with sauce and pasta water.
- Finish with basil, extra virgin olive, Parmesan and cracked pepper
