My Mamma's Pasta

MY MOM’S PASTA

(serves 5)

Ingredients

  1. 500 g Colavita rigatoni
  2. ⁠Colavita Extra virgin olive oil
  3. Salt
  4. 1 onion, finely diced
  5. 1 carrot, finely diced
  6. 1 celery stalk, finely diced
  7. ⁠2 anchovy fillets (optional)
  8. 3 cloves of garlic, chopped
  9. Small handful of Basil
  10. ⁠⁠2 Tablespoons of Polli roasted peppers in oil, chopped
  11. 2 tins of Ciao whole peeled tomato or 1 bottle of Ciao passata
  12. 1 tsp sugar (optional)
  13. 1 tsp Colavita red wine vinegar
  14. 4 courgettes, diced

Finish

  • Fresh basil leaves
  • Colavita Extra virgin olive oil
  • Parmigiano Parmesan 
  • Cracked black pepper 

Method

  • Cook onion, carrot and celery slowly in olive oil with salt until soft and sweet.
  • Add anchovies and let dissolve, then garlic and chili for a minute. Add basil.
  • Add passata or whole peeled tomatoes. Plus vinegar and sugar. Simmer 15–20 minutes until light and fresh.
  • Pan-fry courgette separately in olive oil until golden; season.
  • Fold courgette into sauce.
  • Cook rigatoni al dente, toss with sauce and pasta water.
  • Finish with basil, extra virgin olive, Parmesan and cracked pepper
